Tonight I tried a new vegan recipe I found from Bosh. It was a hit and my kids loved it and even went back for seconds. Let’s just say my kids are my biggest critics lol. They will let me know if it’s good or not with no hesitation. Honest and straight to the point, so I love it!
1 cup of cashew nuts (I did not add)
1/4 cup nutritional yeast
1 bunch of fresh basil
4 garlic cloves
1/2 cup olive oil
1/2 half lemon (juice)
Sea salt (to taste)
1 cup cherry tomatoes
1/2 cup sun dried tomatoes
Note: I added a few items such as mushrooms and bell peppers
Mix nuts, yeast, basil, garlic in food processor and pulse. Next add oil, lemon, avocados, salt in food processor and blend to a paste. Cook pasta as package directed. Then add pesto mix, penne pasta in a bowl, tomatoes and serve.
